Blackberry Collins Recipe

  • 2 c Bluecoat Gin
  • ¾ c fresh lemon juice
  • Blackberry simple syrup*
  • 2 c club soda
  • 8 lemon wheels, for garnish
  • 8 mint sprigs, for garnish

*Blackberry simple syrup: Combine 1 ½ cups fresh blackberries, 1 cup sugar and ½ cup water in a medium saucepan and bring to a boil, stirring until sugar is dissolved. Reduce heat and simmer until fruit is very soft, 20-25 minutes, stirring occasionally. Remove from heat, let cool and strain through a fine-mesh sieve into a container, pressing fruit to extract liquid.

  1. Combine first three ingredients in a pitcher and fill with ice; stir.
  2. Add soda and stir gently.
  3. Serve in Collins glasses.
  4. Garnish each glass with a lemon wheel and mint sprig.
