100% pais coming from a tiny 1.5 hectare plot of 150 year old bush vines which are planted on black volcanic sandy soil in the Secano Valley. The grapes are de-stemmed and fermented with native yeasts and then and aged in 60-year-old pipas, which are old vertical large barrels made from raulí, the native beechwood that’s both dense and finely grained and takes many decades to mature. There’s no added sulfur dioxide, and the wine is unfined and unfiltered. Bright and lively fruit with lifted acidity. Only about 9,000 bottles produced.
