To capture and complement the classic qualities of sauvignon blanc, Olsen fermented the wine in temperature-controlled, stainless-steel tanks and aged a small portion for one month in new and once used French oak barrels. The brief oak-aging imparts a subtle richness to this zesty sauvignon blanc.
